Davos is always the voice of reason and the good influence on Stannis. Of course you'd have to TELL that man that dancing with your betrothed/bride is generally expected. He can be so dense and stubborn at times.
No, it doesn't sound silly at all, I usually compare stannis/Sansa to Ned/Catelyn as well, even though the big age difference makes the situation somewhat more extreme. The way I see Stannis is that he's such a pain in the ass to most people because he just doesn't like them and he sees no reason to be nice to them. But when he marries Sansa ... I don't think he'd see someone annoying, but a frightened young girl who's as unhappy about the wedding as he is, and he's not heartless enough to go like, "shut up, woman, spread your legs and let me do my duty". I'm currently writing their wedding night, and mostly he's just awkward because it's his duty to sleep with her and he NEEDS a son, but he is just not the kind of man to flip a frightened girl over and rape her. I mostly think their marriage would work because, as you said, they'd both try to make it work out of duty, and then slowly learn to appreciate each other beyond that.
True, Davos' hand is so, so important, and Stannis knows that. I think touching Davos' hand is a reminder for him that Davos will always belong to him.
It's funny that you mention Davos bringing out a less moody side in Stannis. Just before I read your comment I had an idea for your prompt about how someone else would see Stannis/Davos, and it includes Davos trying to cheer Stannis up a little.
Everything is frivolous. He probably thinks that liking his pretty wife is frivolous.
